Round two of research and development. Goals: develop a solid yeast donut recipe and start experimenting with glazes.
Likes of Donut Recipe #2:
- This donut had the richness that Derek and I both wanted. Lesson learned: always go with butter.
- The more solid donut was easier to handle in the fryer.
- Peanut oil was so, so much better than vegetable.
- While one of my glazes was inedible, it sure made a pretty donut.
Dislikes of Donut Recipe #2:
- I should always listen to my instincts. The dough felt a little dry when I was working with it, and as a result, the donuts had a bit of heaviness. I think this recipe can be tweaked using some more wet ingredients.
- My first attempt at vanilla glaze was a #fail. I just “winged it.” BAD IDEA, ick.
- My chocolate glaze was a little too heavy at first, but it did improve as I thinned it out. It didn’t have the wow factor I wanted though…
What I’m going to test next:
- Same basic recipe with more liquids in the form of whole milk.
- Work out the best times for waiting for it to rise.
- Spend more time on the glazes, work on a basic vanilla and chocolate.
- I may try frying in shortening – the number one recommended oil for donuts. We’ll see… I’m a little skeptical.
